ESHA software reports edible portion for all meat products, so the protein value that is reported for meat is the meat protein (ie: it does not contain protein from bone, tendons, etc that are not consumed). The software tracks one protein field (total protein) and does not differentiate between animal protein and plant protein. MyPyramid Meat and Bean subgroups (currently under construction), however, will differentiate between animal protein, and protein from beans and nuts.
