Q. What makes up the weight of a food?
A. The proximates are Fat, Carbohdratess, Protein, Water (moisture), Ash and Alcohol. The sum of the grams of all of these should equal the total gram weight. In some cases, such as instant coffee granules, they do not.
Viewing the Spreadsheet report in the ESHA software can help identify where data may not be reported for some of the proximates. A zero equals zero, “--“ indicates that the data was not supplied for the particular nutrient. Ash and water are not available for all foods and ingredients in the database.
