Vitamin Retention

Q.  Is there a way in Genesis to compensate for loss of vitamins, such as Vitamin C, due to a cook step?

 

A.  If you select a cooked form of a fruit from the database, the nutrient values will reflect cooked levels.  If you need to adjust nutrient levels further or in a particular fresh or dried fruit, in Genesis, you can override nutrient values in the Recipe.  Edit Recipe>Nutrients>Override column.  The "Override" column allows you to enter new nutrient values that will be reported on reports and the Nutrition Facts panel.

Some of the reports, like the Spreadsheet and the Multi-column indicate overwritten nutrient values in red.
