A. With the Genesis software, you can create a custom ingredient using the Fat Formulator. This feature allows you to enter the beef fat percentage that you need, and the software will combine lean beef and beef fat food items to create a beef ingredient with that fat percentage.
In Genesis, access this feature through the Database menu:
Database > Fat Formulator
Select “meat” and then enter the target fat by percentage.
