Trans Fat

Q.  Can I assume the monounsaturated 16:1, 18:1, 22:1 (undifferentiated) and polyunsaturated 18:2, 18:3, 20:4 (undifferentiated) are trans fats?  Do I add them all up to obtain the trans fat value?

 

A.  No, the undifferentiated are a mixture of cis and trans fats. If your supplier has not provided you with a trans fat value, they would need to provide data for 16:1 cis and 16:1 trans, etc.
