Q. Should mono, poly and unsaturated, trans fat always add up to 100%. If not, what would the general term for the fats be called that are not included in this 100%?
A. Monounsaturated, polyunsaturated, saturated and trans fats do not always add up to total fat. The glycerol backbone could also contribute up to but typically not more than 5% of total fat. You might view your Spreadsheet report to check for missing values in mono, poly, saturated or trans fields. This could affect the numbers adding up.
